Amaranth fritters


250g baby marrow, grated⁣
1 baby leek, finely chopped ⁣
A handful of parsley and dill, finely chopped⁣
25g parmesan cheese, grated⁣
40g feta, crumbled⁣
Grated rind of one lemon⁣
1 tbsp Vital Green
5 free-range eggs, beaten⁣
Salt and pepper to taste⁣
Olive oil for frying⁣


Mix all ingredients into a bowl and then add the eggs.
Once mixed add oil to a pan and bring to a good heat.
Drop crumpet sized spoonfuls of the mixture into the pan and allow them to brown on each side before turning. If you try to turn them too early they may break up. Make sure you have cooked the egg through and serve with sliced tomatoes.
